Blackberry Lemonade Gummies (GF, DF, Paleo, AIP)

blackberrylemonade3It’s berry season across the country. With the high temps in FL we kick off berry season extra early, which means we are just coming to an end while everyone else is at the peak. Every year we visit the u-pick farms and pick enough to last us the year. This year we started with 50+ pounds of strawberries, moved on to 50+ pounds of blueberries, and now we are finishing up with blackberries. We’re close to Plant City, so we are lucky to be surrounded by berry farms and have multiple options for delicious organic berries. Eating organic can get expensive, but visiting local farms, buying in bulk, and doing some of the work ourselves helps to trim the costs. Depending on where it is in the season organic strawberries are $2.50-4.50 per pound at the grocery store. Picking them ourselves we pay $1.50-$2.00/lb.

Sweet Potato Scramble (GF, DF, PALEO, AIP)

Sweet Potato Scramble

I’m back. I wasn’t kidding when I said that hockey playoffs absolutely consume my life. The lightning made it to game six of the Stanley Cup, so it was a much longer endeavor than we had expected. With games every other night and needed time for recovery (playoffs are stressful), I pretty much stopped doing EVERYTHING.

Kicking off being back to the blog with one of my favorite ways to start the day…sweet potato scramble! I usually prefer this scramble to actually include scrambled eggs, but I have to avoid eggs right now. Why, you ask? Food hates me. That is the other reason I haven’t been posting. I had to re-find myself in the kitchen as I’ve been hit with some health issues and food intolerances that have forced me to change my diet yet again.

Citrus Asian Meatballs with Orange Nutty Sauce (GF, DF, Paleo)

Asian meatballs are a great match for watching playoff hockey, but playoff hockey isn’t the best match for making Asian meatballs. NHL playoffs means there is all kinds of nuttiness going on in my house right now. Hubby and I are die hard hockey fans (Go Lightning!) and our life pretty much stops around this time of year. That being said, my focus in the kitchen on anything is slightly superbly less than what it normally would be. I was working on this recipe while trying to watch a playoff game and in a complete food fail moment dumped all my sauce ingredients into the meatballs. Ughhhh. So, unless you want one soppy mess, I suggest not making these while watching hockey. While that batch was an utter failure, I did like how the orange juice helped give the asian meatballs a boost so I tweaked the recipe to include some juice….just not the massive amount I poured in the first time.

Crock Pot Italian Beef (GF, DF, Paleo)

One of my favorite foods in the entire world is an Italian Beef Sandwich from Portillo’s in Chicago. Unfortunately, Florida doesn’t have Portillo’s, and Portillo’s has tons of gluten. I was lucky enough to go to Chicago for a hockey tournament before Celiac and ate a lifetime’s worth of Italian Beefs. Seriously, we were there for a week and I think I had one for almost every meal…and hockey players eat a lot of meals. I’ve been craving one something fierce, so I came up with this Crock Pot Italian Beef to recreate an old favorite.

When I bought Brittany Angell’s book of all cookbooks, Every Last Crumb, and saw the recipe for baguettes I knew my life would once again be complete. I’m not much of a baker, or a bread eater anymore, so most of the time we eat this goodness over a giant plate of veggies. Sometimes though, you just have to go to town and eat it sandwich style. Smothered in au jus of course!

Cabbage & Carrot Noodles (GF, DF, Paleo, AIP)

Cabbage & Carrot Noodles

Living with food allergies, sensitivities, or Celiac Disease, often means that you find yourself eating the same old boring ‘safe’ foods over and over and over again. While I love trying new flavors and coming up with new recipes, I live in the real world and don’t have time to eat something new every day. I need quick recipes that can easily be adapted for different meals.

Enter Cabbage & Carrot Noodles! This is one of my favorite ‘noodle’ replacements that can be used as a base for pretty much any type of protein or flavor. Obviously they don’t taste like noodles, but anything that can be thrown in one bowl and called a meal is close enough to a noodle for me.

I’ve been eating these on the regular. I originally made them as a base for asian pork meatballs (recipe will be posted for those soon!), but quickly realized that I LOVE THEM WITH EVERYTHING.

Mochalicious Thin Mint Chia Pudding (GF, DF, Paleo)

Thin Mint Chia PuddingOne of the things that I have really missed since changing my diet is girl scout cookies, specifically Thin Mints. My mouth waters just thinking about devouring a sleeve of those goodies straight from the freezer. I also really needed an easy, quick, and make ahead breakfast for work days. And that’s where this gem came from.

This recipe is one of those eat at any time, breakfast, dessert, snack, whatever your heart desires. I usually make a batch on Monday’s (I work Tues-Friday) and have it for breakfast each morning the rest of the week. It’s just enough caffeine to give me a little kick, and not enough to make my heart jump out of my chest…caffeine and I don’t get along. You can pre-make individual servings in little mason jars or just make the batch and take servings as you go. We’re usually short on fridge space, so I find it easiest to put the full batch in a quart size mason jar and fill a little jar in the morning to take on the run.
