Let’s be real. Life is busy. As much as I love to cook, I don’t regularly have time for big elaborate meals, and I’m guessing I’m not alone in that. I need quick, easy, and as little hands on prep time as possible. This is why I love roasting vegetables. This is also why I love Primal Palate spices. I’ll explain.

Roasting vegetables is one of the simplest ways to cook veggies and the same basic formula will work for pretty much any vegetable. Cut veggies + fat of choice + seasoning + 375 degree oven + 30 minutes or so = dinner. Simple. Add in a Primal Palate seasoning blend and I don’t even have to think about flavors. It’s all done for me. Boom. Happy belly.

Luckily I do ok with the non-AIP spices now, but I remember how difficult it was trying to season a meal when I first transitioned to AIP. The AIP blends are an approachable way to get a feel for AIP flavors with options that work for breakfast, lunch, or dinner. You could swap out any of the Everyday AIP blend options in this recipe, but I really dig Garlic & Herb for roasted vegetables. It’s pretty delicious on chicken also. All the flavors are spot on as they are made of the highest quality organic spices and herbs, and I really mean the highest quality. I’m a bit of a spice hoarder and these are seriously the most flavorful and fresh tasting spices and herbs I’ve ever had.

Garlic & Herb Roasted Vegetables
Yield 6 -8 servings
- Preheat oven to 375 degrees and line a large baking sheet with parchment paper.
- In a large bowl mix vegetables, olive oil, and seasoning until well coated. Transfer to baking sheet and spread in a single layer.
- Bake for 25-30 minutes (or until fork tender), flipping half way through.
For added flavor sub 1TBS of olive oil with ghee.* *AIP reintro
