Paleo Broccoli & Bacon Salad

I know this is three salads in a row, but I really do eat more than just cold salads. I’ve already explained that it’s deathly hot outside and less cooking the better…so here we go.

I’ve made this paleo broccoli & bacon salad every week for the last three weeks. I’ve been bringing it for breakfast every work day, paired with some grilled chicken.  It was inspired by my trip to Austin for Paleo f(x) (which I will write about one of these days.) We stopped at the famous paleo coffee shop Picnik a few times, where I loved on the Broccoli Crunch + Chicken.

Prosciutto and Strawberry AIP Salad

I don’t know about the rest of the world, but it’s hot as hell in Florida right now, which means the less I have to use the oven the better. This Prosciutto and Strawberry AIP salad requires no cooking and comes together in a cinch. It’s also light and refreshing, which is perfect for the summer heat.

Big ass salads are one of my go to lunches. I try to prep proteins liked grilled chicken and steak in advance, but sometimes I get busy and life gets in the way. Prosciutto is one of my favorite AIP salad add ins, and is great for those days that I just can’t cook something up.

Instant Pot BBQ Chicken Wings (Paleo, GF, DF)

Did you really think a week was going to go by without me posting an Instant Pot recipe?! Yeah, right! I’m obsessed with this thing. We cooked in it ALL week. These Instant Pot BBQ Chicken Wings are one of our absolute favorite quick meals. We play hockey on Sunday’s and come home starving. I throw these in the IP, take a shower, and get out to finger lickin’ deliciousness. That’s one of the benefits of the Instant Pot…you don’t have to babysit it!

Pomegranate Carob Bark (AIP, Paleo)

With all the holiday food around this time of year, I’ve really been craving chocolate. Unfortunately it’s one of the foods on my ridiculously long list of food intolerances, so I’ve done without it the past 6 months or so. I’ve tried bringing it back a few times, but each time I get a migraine and each time I convince myself it wasn’t from the chocolate and try again. Now that I have this pomegranate carob bark I think I can finally say goodbye to chocolate. For those of us who don’t tolerate chocolate or are following the Autoimmune Protocol carob is an excellent alternative. It tastes similar to chocolate, with a slightly sweeter flavor and three times the calcium.

Instant Pot Beef Stew (Paleo & AIP Options)

I got so excited for the Black Friday Instant Pot sale that I’ve been absolutely obsessed with it again…and I didn’t even buy one during the sale! I’m just so excited to know that so many people are sharing in the glory that is the Instant Pot. Pause. How old am I? I’m 30, but the fact that I’m practically dancing over a small kitchen appliance I feel 60. If you haven’t noticed yet I’m pretty good at going off topic. Sorry about that.

Last year I made this Instant Pot beef stew a million and one times. I just couldn’t get enough of it. There is something about removing the lid and being met with a beautiful and aromatic pot of beef stew that is so gratifying. If you an Instant Pot you know what I mean. It’s like that feeling when you pop a really good pimple. I can’t believe I just said that. Wow, what a poor analogy to use when talking about food. Let’s talk about something else.

Instant Pot Butternut Apple Mash (Paleo, GF, AIP)

I really enjoy butternut squash, but all my favorite ways to eat it are loaded with sugary maple syrup. Since I love butternut so much, I naturally bought out the store and my cupboard is overflowing. Anyone else do that or am I the only food hoarder? I thought about slow cooking it with apples to really let the flavors meld together. As much as this sounded delicious, I’m not much of a planner when it comes to sides and knew that would be pretty impractical for the long term. I like sides that I can put together last minute and without much thought. This Instant Pot Butternut Apple Mash totally fits the bill. Before this I hadn’t experimented with the Instant Pot for side dishes and I have no idea why. It’s fantastic! I was so caught up in it for cooking proteins and broth that I neglected the world of vegetables.

To make this recipe even quicker use pre-cut butternut squash. Trader Joe’s sells it by the bag. If I’m working with the full squash I like to peel and pre-cut butternut on the weekends so it’s an easy  grab and go option during the week. Whatever option you choose you butternut squash this recipe…it’s awesome! You see what I did there? My punny husband would be proud.

Cranberry Orange Cookies (Paleo, AIP, GF, vegan option)

Did you really think I was going to tease you with a powdered sugar recipe and not make something from it? Yeah right! IT’S COOKIE TIME! I’ve been having a lot of fun lately stepping outside of my comfort zone into the world of baking. I’m definitely more of a cook than a baker, so I’ve really enjoyed the challenge. These cranberry orange cookies are little gems of citrusy tangy tarty goodness. They are reminiscent of a shortbread cookie, crispy and crunchy but melt in your mouth. Nut-free with an AIP option, they are appropriate for people with all types of food allergies and intolerances. They stack well and could easily be wrapped up for the perfect handmade gift, storing for about 2 weeks. If you make a double batch you can save some dough logs for later – they will keep in the freezer for up to a month!

Paleo Powdered Sugar

It’s the time of year for all things sugar, cookies, and cakes. I know how difficult it can be to manage a gluten free lifestyle during the holidays, so I’m doing my best to bring you all the paleofied treats and recreations I can. Recreating traditional flour recipes into a paleo recipe is getting easier and easier thanks to Otto’s Cassava Flour, but finding a packaged paleo powdered sugar to make those perfect cookies isn’t as easy.

Lucky for you powdered, or confectioners sugar is super simple to make. Grab your food processor and you’ll have some in no time. This recipe uses arrowroot starch in place of traditional corn starch. You could also sub tapioca starch.
